Fruit Salsa
This recipe is one I just threw together last night. It's all natural, and no sugar added! (at least not in the salsa- the chips have cinnamon sugar) It turned out AMAZING! And it totally supports my goals of getting things done, and being healthy! So here you go!
I used the Tupperware smooth chopper (new product and I love it!) to chop up really fine:
1 apple
4 Strawberries
2 kiwi's
I love the smooth chopper- but word to the wise- it works really well so you only have to pull the handle a couple of times for a small chop, the first time I used it I went pull happy and pulled it about 10 times and had mush. oops!
Then I hand chopped one banana so it didn't turn to mush.
Add 2 T of lemon juice (keeps the apple and banana from turning brown)
Mix together and tada!
For the chips:
Take a couple of flour tortillas and cut them like a pizza. Place the slices on a cookie sheet, spray with Pam spray, then sprinkle cinnamon sugar on top. Bake at 350 for 15 minutes or until crispy and chip like.
Use these to dip into the fruit salsa. MMMMMMMMMMmmmMMMMmm good! And healthy too! Great for after school snack for kids!

Time to get back in the routine!
After a roller coaster of the last 9 months or so that included major sickness during pregnancy, packing to move, moving, then unpacking SLOWLY while still pregnant and sick, then having a c-section and all the recovery that goes with that, I am FINALLY itching to get back into a routine and be productive and start some fun projects.
I appreciate all your support and patience as my posts have been more random during this time. I'm planning on doing a giveaway soon for my loyal fans/followers- so watch our facebook for updates on that! :)
So here's my plan.... if I blog it here chances are much greater that it will get done! And I love the picture above that keeps me grounded in my goal setting.
- Now that I'm able to, I plan to organize and finish unpacking whatever is needed in the house.
- Daily cleaning and maintenance is a given which should help keep things staying clean.
- I also plan on going back to cooking all (or at least most) of our meals from scratch and as little processed foods as possible like I did before, trying new recipes and of course sharing them with you!
- Keeping this routine and making these changes should allow me some time for other projects such as sewing, scrap booking, food storage, etc. which I will also share with you.
As for projects I plan to do-
- Assemble the 2 chairs we got for our dinning set- I know this sounds simple and dumb but it's something that needs to be done and on my check off list.
- Once we are able to purchase nice bookcases I will unpack all our books that are now piled in boxes in a corner of the family room.
- My closest goal for a project to do is to organize and rearrange the family room. This should be a fairly easy project, just time consuming.
- Clean and organize the garage! Putting up shelves will help, now if I can just bribe my hubby to put them up for me! I should be able to dejunk some stuff at the same time.
- This Summer we are going to rearrange some of the kids' bedrooms which I am way excited for!
- After rearranging their rooms comes decorating them!! I already have an idea for painting the girls room, the little boys still want Toy Story theme so I may just get wall stickers for theirs.
- At the same time of doing this I plan to repaint my daughter's dresser, nightstand and bookcase- which will be a good sized project in and of itself. This project needs to wait for warmer weather though.
- Depending on the foods we grow or can get cheap I want to do some canning. Ideally I would love to bottle spaghetti sauce, salsa, and peaches. I will be making some freezer strawberry jam too.
- I would put a garden on this list- but that's my hubbys project, which I'm sure I'll help with!
And that's just what I've come up with so far!! Can we do it? YES we can! Who wants to see before & after pics???

Strawberry Lemonaid Cupcakes
After searching for some fun gourmet cupcake recipes I got this idea. As always I improvised and adapted it to make it my own! This recipe will make 12 cupcakes, but double the frosting needed (I froze the leftovers for next time)
Cupcake:
1 cube butter- soft
1 c. sugar
-cream together then add:
2 eggs
1 T lemon juice
1/2 c buttermilk
1 1/2 c flour
1/2 t. baking powder
1/4 t salt
fill cupcake liners 2/3 full. Bake at 325 for 25 minutes
Frosting:
1 cube butter- soft
3 strawberries- pureed then added to butter
1 t. vanilla
1/4 c. buttermilk
4 c powdered sugar
mix well then frost cooled cupcakes.

Pulling in the Reins
Although our family isn't as big as some, and is by no means a Duggar family, having 5 kids at home and hopefully more in the years to come does mean we budget and do things a little different than normal.
As our kids have gotten older we have realized that the 1# package of ground beef and small handful of spaghetti noodles to make dinner isn't enough anymore. Last night for example my 6 year old ate 4 slices of pizza- equal to as much as my husband ate! So we have not only had to adjust how much food we prepare for meals, but also side dish compliments to help fill everyone up. It has been a mental adjustment while shopping as well. I'm always looking for a good deal and have recently gotten more cost-aware and bulk buying aware.
Luckily for us the majority of our kids are good healthy eaters and not very picky. The flip side of this is having to rein in the amounts of certain foods they are allowed to have for budget's sake. Oranges for example are one of the favorites at our house! We've had to limit the kids to 1 orange a day. Otherwise a huge bag of oranges would only last us 3 days or less. At first you might think, why limit a healthy food? Not only because of the cost, but we also want them to have a balanced diet. Since our family rarely buys any processed foods (mac & cheese and gogurts are about the only processed food types we buy) we make a lot of our meals from scratch and have a balanced healthy diet of all the food groups.
So at our house we have the traditional go-to snacks of: apple, orange, banana, strawberries, yogurt, string cheese, carrots, and peanut butter on a spoon
sometimes we have or allow: homemade sweet bread such as banana, pumpkin, zucchini etc, crackers, homemade cookies/brownies or other treat. If we have or allow these they are usually available after a healthy snack.
Other than a weekly pizza night we usually don't eat fast foods. I think the balanced diet we provide for our family keeps us healthy. Not to tempt fate but we rarely get sick. It's been years since I've had to take any of my kids to the Dr. because they were sick. Other than a small cold, occasional allergies or maybe the flu once a year we're a pretty healthy family. This is in large part to our healthy eating choices I'm sure.
I challenge you to work on eliminating processed foods, fast foods, and reduce refined sugars as much as possible then add more fruits, veggies, and homemade meals and see how it affects your family for the better!

Mega Bloks Blok Squad
We were able to review this set of Mega Bloks recently. This is definitely a set that you get your money's worth! My 3 boys were going crazy over this set from the moment we opened it.
Pros & cons- there are a LOT of small pieces so even though it says ages 5+ keep that in mind according to your kids, it took a little bit of time to figure out which parts were meant to build which item (boat, bus, or car) but that could have been because my boys were so excited they opened it without me. A cool aspect of it is that because there's so many small parts and they all work great together it allows for creativity to create a lot of things not shown. (I love seeing what my boys come up with) Pay close attention to the instructions for where the stickers go.
You will want a nice container to keep all the small parts in when they're not being played with.
