Ham Fried Rice

This is a very easy dish to throw together for a filling Chinese food night.

Adjust this recipe according to your family size, we have 6 people so I make a large batch.

Cook 2-3 cups of rice
In a frying pan pour about a half dollar size portion of oil (canola or veggie)
4-5 slices of ham lunch meat- cut into squares
2-3 green onions- chopped
1 package of frozen peas & carrots
Cook until slightly golden

Crack 3-4 eggs on top of the veggies & ham
stir up to make a scrambled egg mixture with the veggies & ham
Once the egg is cooked, add the rice and 3-4 T of soy sauce.
Mix all together and serve!
