Pineapple Orange Cookies

These are a unique cookie my mom used to make every year for my brother's birthday since they are his favorite.  These will be REALLY soft cookies!

1 c Crisco


3 eggs

1 c. pineapple juice (from can of crushed pineapple)

1 t baking powder

5 c flour

2 c white sugar

½ c. buttermilk (or milk w/ 1 T vinegar instead)

1 t baking soda

½ t salt

1 can crushed pineapple


Mix all together. May need to add more flour if dough is too sticky.

Bake at 350 for 12-15 mins


Frost with Orange frosting:

1 cube butter


1 lb powdered sugar

4 TBSP orange juice concentrate

No water

Mix with mixer till smooth.
