Samoa Cupcakes
Made these up on a whim today and can I just tell you they are the BEST cupcake I've ever had!! Talk about heaven in a dessert!
Cupcake:
1 box chocolate fudge cake mix. Make according to box directions (I add applesauce instead of oil)
pour into cupcake liners and bake for about 8 minutes
Place 1 Rolo on top of each cupcake- it will sink in (Optional)
bake for the remaining 10-12 minutes or until done. Cool.
Frosting:
1 cube butter- very soft
1/2 package of powdered sugar (1# )
1/4 c. cocoa powder
2 t. coconut extract
1 t. salt
1/4 c. milk
Beat on high in your stand mixer with the whipper attachment until smooth and fluffy. Add a little more milk if necessary- but make sure to mix it well first. Pour into a piping bag and frost cupcakes.
Topping:
toast 1 c. coconut in a frying pan until golden brown. cool then sprinkle on top of frosting.
drizzle Carmel sauce (store bought) lightly on top of frosting & coconut
Enjoy!
*** AFTER NOTE*** If you aren't eating the cupcakes soon wait to put the Carmel sauce on until right before serving. I found they made the cupcakes soggy the next day.
