Years ago I was researching the top 10 healthiest foods and wanted to create a recipe that included as many of them as I could. So I came up with this recipe I call Miracle sauce. It's basically like salsa, but not spicy. We use it on top of our chicken bread. It has 5 of the top 10 foods in it: olive oil, tomatoes, spinach, garlic, and parsley.
I just put everything into my Cuisinart and blend it up really well.
2 large handfuls of spinach
olive oil to help spinach chop nicely (about 2 T or so)
Chop until spinach is finely chopped then add:
3-4 cloves garlic
4 green onions
small bunch of parsley
2 cans of stewed tomatoes
Mix all together to desired consistency- I like it pretty smooth.
Add a little salt to taste.
It doesn't look appetizing but it tastes amazing!
We pour this over eggs, or our Italian Chicken Bread
