This was another Pinterest experiment that was a HUGE success!! It was super easy to make, it's baked so it has a health factor. Kids, hubby, and myself all really enjoyed this recipe and we plan on making it again. It was GREAT with the onion sauce poured over it.
Here is where I got the origional recipe idea.
I did adapt it a little....
In a shallow container (I used a Tupperware cold cut keeper) place about 2 cups of crushed corn flakes. (you could also use Total or a healthier version of basically the same kind of cereal)
1/4 c. of powdered ranch dressing mix
1/2 c. shredded parmesan cheese
mix lightly with a fork.
You can then dip the chicken breasts into milk, butter, or I did slightly beaten egg whites. Then roll the chicken into the cereal mixture.
Bake at 350 for 40 minutes or until chicken is no longer pink in the middle.
When I made this it looked pink on the outside, but the middle was cooked perfectly.
