The BEST peach pie recipe


This Thanksgiving I wanted to be a little adventurous and make up a new pie recipe.  This was so easy I will never make fruit pies any other way! My kids all helped me make them and had a lot of fun. This recipe is so easy and simple, yet tastes so delicious, it would work with any kind of fruit too. I made some mini pies with my new Tupperware mini pie press.  Here's the recipe and instructions.
You will need:
1 cup of fruit jam (in my case I used peach)
1 can or 2 cups of fresh fruit chopped (I used canned peaches)- this is optional but will give nice fruit chunks in your pie
3 T cornstarch
2 T water

In a pan combine the jam and fruit and mix well together over a med high heat.  In a separate small bowl mix together the cornstarch and water (you want just enough water to help the cornstarch dissolve- but not be a paste).  Once the fruit is warm add the cornstarch and cook until desired thickness.  If you want it more thick just dissolve more cornstarch in water and add it.  Simple as that!

Now that you have your pie filling it's time to make your pie crust.  This year to simplify life for me I bought my pie crust dough.  So at this point all I had to do was unroll the dough, and then I used my Tupperware mini pie press to cut out 2 circles  (making sure one of them had the star hole for a vent).
 
Then place the bottom layer of crust into the mini pie press and spoon in some of the pie filling

Next you add the top layer of crust (the one with the star shaped vent) and then press the dough together to seal it into a mini pocket pie.


It did take a little practice to get the right amounts of filling (as you can see from one leaking on my pan)  We added the cut out star for decoration.  Then I baked them at 350 for about 10 minutes or until they started to get golden.


The end result!  And they tasted amazing!!  (I also filled some of these mini pocket pies with cream pie fillings and they turned out great too- they did tend to leak a little more in the baking process though)
