Crock Pot Freezer Meals 2

Our first post of some crock pot freezer meal ideas & recipes was such a hit we wanted to share some more of our experiments!  These include: Blackberry Meatballs, Breakfast Casserole, Curry Chicken, Cranberry Orange Chicken, and Italian Chicken.  I have received some questions on the other post about if the meat was pre-cooked, the answer is no.  Consider it marinating by combining all the ingredients into the bag and freezing them.  We hope you enjoy this second batch of recipes!

You don't have to freeze these, but sometimes having all the ingredients in one bag makes it easy to  throw dinner together.  And great for husbands who don't cook too!

Curry Chicken-
Peel and dice 5-7 potatoes
chop 1 cup of carrots
slice 1/2 of an onion
1 # chicken (I used tenders, but you can cut a breast into chunks if you like)

Sauce:
2 T green curry paste (I really wanted the yellow paste but couldn't find it so I improvised and added more spices)
2 T curry powder
2 t. ground ginger
1 t fish sauce
2 t. chicken bullion
1 t. salt
1 can coconut milk
mix well together, then pour over the other ingredients in the bag.

Instructions written on the bag (write this BEFORE putting things into it):
Add 2 c. water.  Cook on low 6-8 hours or high 2-4 hours


Italian Chicken
1# chicken
2 cans stewed tomatoes
1 can mushrooms
1/2 onion -sliced
2 T Italian seasoning
1 T garlic- minced.

Instructions written on the bag (write this BEFORE putting things into it):
Add 2 c. water.  Cook on low 6-8 hours or high 2-4 hours


Cranberry Orange Chicken
1# Chicken
1 cup orange juice (you could also use frozen concentrate)
1 cup cranberry sauce

Instructions written on the bag (write this BEFORE putting things into it):
Add 2 c. water.  Cook on low 6-8 hours or high 2-4 hours



Breakfast Casserole
12 eggs- mixed well
1 cup milk
4-6 cups hash browns
1 tube sausage (I used Jimmy Dean Maple flavored)
2 t. salt


Instructions written on the bag (write this BEFORE putting things into it):
Add 2 c. water.  Cook on low 6-8 hours or high 2-4 hours



Blackberry Meatballs
20-30 meatballs (I used the ones from Costco)
1 pint jar (2 cups) blackberry jam
1/4 cup chili sauce

Add 2 c. water.  Cook on low 6-8 hours or high 2-4 hours

  3. Hi Jo Dee, Your recipes look delicious and I'd like to try them out. Just wondering what the # beside the amount of meat means, eg: 1# chicken, or 2# pork. do you mean pound of meat?

  5. Is the water you add to the crockpot before cooking really needed? It seems like so much. I'm excited to try some of your recipes.

    1. I agree. I can't wait to try a few of these but will omit the water altogether. Seems like it will really water down the flavor. But that's just me... The cranberry orange chicken looks awesome though. Mmm.

    2. It actually, also, depends on your slow cooker. I usually always double the liquid recommendations of any recipe because I know my machine has a tendency to run hot.

  6. It just depends on how much sauce you want. You can always add less water and then as it cooks check it and add more HOT water if needed.

  8. The bag sizes wont matter a whole lot- you can adjust them to the size of your family and what fits in your crock pot. Usually I use Gallon only because we have a large family, but I would make the quart size for my parents that was enough to feed just the two of them. These are all for gallon size- if you wanted to make them in quart size just divide the ingredients up to fit in smaller bags.

  10. Hi! I know this is an old post but I just wanted to ask how anyone did with freezing the raw potatoes in these freezer meal sessions 1 or 2? I have shied away from using them in freezer meals because I've seen so many other comments on other blogs that they turn black or discolor when frozen in freezer meals! Anyone have any experience like this? Thanks!

    1. It would depend on the ingredients they are mixed with... just like apples/banana's will turn dark after cutting them, but if you coat them in lemon or pineapple juice they wont. Similar to potatoes, it would depend on the other ingredients. I would recommend freezing as soon after cutting as possible.
