Great Harvest Honey Whole Wheat Bread


I was in the mood to make some home made wheat bread so what better recipe then to make Great Harvest's Honey Whole Wheat Bread!?!?  I found the recipe from a pinterest post on Find It, Love It, Share It.  After trying it out, this is what we thought of it.....
AMAZING!!  So a few tips and things I noticed.  First this recipe is pretty quick to make.  From start to finish you're looking at less than a hour and a half.  So you could be 90 minutes from eating this delicious bread!  This recipe really only makes 2 loaves.  I split the dough into 3 loaves and 2 of them were pretty short, so next time (which may be today) I'll shoot for 2 high loaves instead.

There's only 5 ingredients so you know exactly what's in it!  And you can add other things if you want such as oatmeal, flax seed, etc.

I needed to grind some wheat into flour anyway- so it's best to use fresh ground wheat flour for this recipe, which I happened to have!  First let me just say I love my wheat grinder!  It's a stone grinder, and it makes a low, soothing noise as it grinds the wheat.  6 cups of wheat will grind into just over 10 cups of flour.  If you've stocked up on wheat in your food storage it's important to have a grinder!  There are also hand grinders in case power isn't available. (I still need to buy one of those)


So after grinding my flour it was time to start making bread-

In my kitchen-aid mixer I put:
3 T yeast
4 cups warm water
1/2-3/4 cup of honey
(remember honey is a natural sugar and great for diabetics!)

Let the yeast dissolve and get foamy.  Then add 10 cups of wheat flour and 3 t. of salt.  At this point you can add any other oats etc you like.
Let raise in the bowl for 15 minutes.  The dough will be pretty sticky.  (remember the less flour, the softer the bread)
Punch down the dough, then separate into loaves.  (Like I mentioned before, I made 3 loaves, but from now on I'll only make 2) I greased the pans with Pam spray.
Raise in the pans for 30 minutes with a wet towel over the top.


Bake at 350 degrees for 30 minutes.

The tops of mine didn't get very brown, but they were cooked perfect.
Perfect with some of my home made jams!!
I think I may start making bread each week!
