Farmer's Casserole


When inspiration was lacking on what to make for dinner, I turned to Pinterest!  I soon came across a few ideas that gave me the inspiration to create what I'm calling a Farmer's Casserole.  And let me tell you- DEEEELISH!!  It's pretty versatile and could be changed up to be whatever veggies and meats you prefer.


(the recipes I found called for 8 eggs, but since I only had 6 I just added a little less milk)

In your casserole pan spread 1 bag/box of hash browns.  You could use frozen, or like me, I used the dehydrated ones from Costco.

Add your favorite ingredients.  This is what I put in:

4 slices of ham lunch meat- cut up
3 green onions- chopped
2 cups broccoli
1 cup shredded cheese (I used Colby jack)

Then in a separate bowl mix together 8 eggs and 2 cans of evaporated milk.
Season however you like, this first time I just did salt, but in the future I'll mix it up a little depending on the ingredients I put in.



Pour the egg mixture over the other ingredients and mix slightly with a fork.  Bake at 350 for 1 hour or until set and not wiggly.

Serve with salsa, ketchup or sour cream.

I think I'll try a few variations with spinach, tomatoes, mushrooms, asparagus, sausage, bacon, and anything else that inspires me!

This would probably also work great in the crock pot overnight on low for a easy breakfast in the morning!
