Chipotle Cilantro Grilled Chicken


Another pinterest inspired recipe we tried out.  The best thing about this chipotle cilantro grilled chicken is that it only takes about 25 minutes from start to finish so it's a pretty quick one to throw together!  And it also has a cilantro lime dipping sauce to go with it (optional).  If you're worried about spice, don't.  I have a low spice tolerance and it wasn't spicy at all.

So as usual, we changed it up a little.  For starters we didn't make kebab's, we just cut 5 chicken breasts into strips, put them in a ziploc bag and added the following (we doubled the original recipe)

1/2 c. brown sugar
4 T minced fresh cilantro
2 T chipotle seasoning (we used the Tupperware one)
3 t salt
1/2 t. pepper
1/2 t. garlic powder

Mix them all up with the chicken until everything is coated well.

My hubs then cooked them on the grill until the chicken was done.

For the dipping sauce:
1/2 c. sour cream
2 T. mayo
3 T lime juice
2 T. fresh cilantro- chopped
1/4 t. garlic powder
2 green onions- chopped

Mix together and use to dip the chicken in.

My husband really loved this dipping sauce, the kids and I however thought it was just ok, but in saying that I'm not a big fan of cilantro and it had a lot of cilantro flavor.

We all really enjoyed the chicken though and will probably make it again and experiment with different dipping sauces.
