Chinese Mushroom Chicken in the Crockpot


After searching high and low for a recipe for Chinese Mushroom Chicken that I could make in the crockpot and have it taste something like Panda Express came up with nothing, I made up my own!  And boy is it delicious!!!  Talk about easy, and perfect for Summer since it doesn't heat up the whole house to make!
Since I have a large family and we're big fans of Chinese food I made a large crockpot full, feel free to cut the recipe in half for less people.

In your crockpot place:
cut up chicken (I used 5 breasts)
1 cup chicken stock- I did water and 2 T soup flavoring
2 T minced garlic
2 T sesame oil
1/2 c. soy sauce
1 T Balsamic vinegar
1/2 c. brown sugar

Cook on low for 4 hours (or high for 2)

Remove about half a cup of the sauce and add 2 T of cornstarch, mix well then add back to the crockpot
Add in chopped zucchini and sliced mushrooms

Cook for another hour on low (or 30 mins on high)

Serve with rice or noodles.  Enjoy!!
