Crock Pot Funeral Potatoes


One of my favorite meals (but not the lowest in calories by any means) is funeral potato casserole.  Being that it's Summer and this year I am experimenting with making as many meals in the crockpot as possible this recipe HAD to be tried.  And it worked like a charm!
In your crock pot put:
2 bags (about 8 cups total) of frozen potatoes- you can use the hash brown cut, or I did the cubes this time
3 cans cream of chicken soup
2 cups sour cream
1 cup chopped ham
5 green onions- chopped
1 cube butter- optional, but it's really better with it
(and this list of ingredients is why I only make this once or twice a year!)

That's it! Turn your crock pot on high for it to be ready in about 2 hours or low for it to take about 4 hours.

You can also add cheese for the last few minutes if you like, either way it will be an amazing dinner!
