Italian Crock Pot Roast


In our Summer of crock pot cooking, aka pregnancy dinners, I've gotten creative with ideas and flavors.  This time was Italian Roast and veggies.  Easy, and my family all liked it so it met the requirements!
All I did was put the roast into the crock pot, then pour about 1/3 of a container of Italian dressing on top of the roast.  Cook it on high for about 2 hours, then lift up the roast and put sliced potatoes and carrots underneath it.  Cook for about another hour or until the veggies are done.

That's it! Simple and done!
We served it with a spinach and strawberry poppyseed salad.
