Chicken Enchilada Casserole in the Crock Pot


This week I was looking for something easy since the baby has been sick and turned me into a zombie.  So I came up with this Chicken Enchilada Casserole and even made it in the crock pot!  It was super easy and tasted delicious.  You could even put it in tortillas if you want.
The seasoning I used for this recipe is from Homemade Gourmet.  It's actually a soup- but I converted it to this casserole by making it thicker with the rice and beans. I used to be a rep for them years ago and still have a bunch of their seasonings- they're amazing!

In the crock pot put your chicken (I did 2 large breasts)
about 6 cups of water (you want enough to be a good ratio for your rice when you add it later)
1/4 c. of the chicken enchilada soup seasoning

Cook on low for 4-5 hours then add:
2 cups rice
1 large can of pinto beans (you could add dry beans when you first put in the chicken I bet)

Cook for another 2 hours and serve.

We put a little sour cream and cheese on top and it was amazing!
