Everything is better homemade! This week I made some homemade refried beans. This recipe could be quick or long depending on the level of "homemade" you want to do. Meaning you can soak your beans or cook them in a crock pot, or do the speedy version like I did and use canned pinto beans.
This recipe was so easy we'll for sure be making it more.
Cut up 1/2 of a onion and saute it with a little oil and about 1 T garlic until it gets a nice caramelization, then add it to your food processor.
(you may be able to use a blender, or even worst case a potato masher, but I highly recommend a food processor)
Add:
2 cans of pinto beans (drain the liquid depending on how thick/runny you want your beans to be)
Mix them together until it's as smooth or chunky as you like it.
Then return the beans to the pan that you cooked the onions and garlic in and cook until the beans are hot. Add salt to taste
I also added a little bit of Macayo's taco seasoning sauce- you could add a bit of salsa or whatever other sauce flavors you enjoy.
Sprinkle cheese on top and either place the pan in the oven long enough to melt the cheese, or turn the burner on low and cook until the cheese is melted.
Serve and enjoy!
