It was late, I didn't want to make anything fancy for dinner, when I came across this idea for Vegetable Soup on Pinterest. Simple, easy, and fairly quick, so we tried it out. It was pretty good! Even my 3 year old loved it! It's a great vegetarian meal, healthy, and a nice soup for cold days. Here's the recipe-

But as usual, I did it my own way and changed things up a bit. Plus I only wanted to make enough to feed 4-5 of us that night since I wasn't sure how well the kids would like it.
In a stock pot cook:
2 T olive oil
a couple of handfuls of baby carrots- chopped
1/4 c. celery- I always have this pre-cut in the freezer
1/4 c. onion- also usually pre-cut in the freezer
1 T minced garlic
Cook the above together for a few minutes then add:
1 can diced tomatoes
3 c. chicken stock
2 potatoes- cubed
Any seasonings you wan- I used about 1 T garlic & herb seasoning & 1 t. seasoned salt
Cook to a boil, then add:
1 can green beans
Cook for another 15-20 minutes (until potatoes are getting tender) then add:
1 can corn
Cook for a few more minutes then you're good to go!

Oh that looks so good! I have not made a vegetable soup before at home, will have to try this one! I love how easy and quick it is too!
