Strawberry Cinnamon Rolls with Lemon Glaze


After seeing a idea of strawberry cinnamon rolls on my Popular Pinterest Posts I wanted to give it a try!  My confession is I didn't use her recipe since I already have a great recipe I use for cinnamon rolls, so I just made that and tweaked it a little.  What goes great with strawberries? Lemons! Both have a fresh Summer taste so I made a really easy Lemon glaze that you'll love and be shocked how easy it is to make.
For my dough I use the recipe here from How Does She.  It's just amazing! The rolls are so delicious, and the dough is a sweet dough so it's perfect for cinnamon rolls too.

Once I rolled out the dough to a large rectangle (like you would for cinnamon rolls), instead of spreading the butter, cinnamon, and brown sugar- I spread some of my recently made Strawberry Freezer Jam.

One thing I learned after doing this is that it doesn't take a lot of jam, and you may want to put none to very little on the end that will be rolled up last.  What I found was that as I rolled the dough it was slippery and pushed some of the jam out of the way- needless to say by the time it was rolled up I had a good jam mess on my counter.  No matter, these are delicious so it was worth it!

Cut the rolls like normal (I use a piece of string that I slide under then criss cross and pull and let the string do the cutting)

Place in a baking pan and bake at 350 for about 20 minutes or just until they start to get a little golden.


For the Lemon Glaze:
Squeeze the juice of 1 lemon into a bowl
Add enough powdered sugar to get it to the desired consistency.


That's it!!  Easy right? (pssst- this is how most glazes like for doughnuts are made: just water and powdered sugar)

Drizzle the glaze over the rolls- or spread it on if you made it thicker and want more on them.

I can not express what a delicious sweet roll these were!! So vibrant with flavor and very refreshingly Summer.
