Mexican Corn Hash



Ok, this picture can go down as horrible, but sad to say it was the best one I got of this recipe.  The recipe that will also be added to the "ugly deliciousness" recipes.  It doesn't look pretty but it's AMAZING!  What was actually an accident as I was trying to make some Mexican Corn Hash turned out to be a wonderful accident! We put some in burritos and it kicked them up,  and I liked it just as a side dish with my burrito.  Here's the recipe:
In a frying pan add:
2 T vegetable oil
1 onion- chopped (I used a red onion)
2 T garlic

Cook until the onion starts to turn clear.  Then add 2 cans of corn.  Cook until the corn gets a little golden (or you can do it burnt like some people like)

While all that's cooking, on a plate have 3 avocado's cut in half and out of the skin then chopped up slightly.  Sprinkle plenty of lime juice on them so they wont brown.  If your avocados are soft you wont want to chop them much but if they are more firm you could chop them in to bite sized pieces.

In a bowl mix:
1/4 c. mayo
1/2 c. sour cream
1/2 teaspoon paprika
Any other Mexican flavored spices you have (I had a little bit of salsa mix I added)

When the corn and onion mixture is done add it and the avocados to the mayo mixture.

Serve hot or cold!
