If you're looking for some high protein, low carb recipes you may want to try this one out. It's easy and delicious! I kind of just threw it together Sunday morning and my kids loved it!
Here's the recipe:
8c spinach - sautéed in about 1T of olive oil until wilted.
1 1/2c mozzarella cheese
1/2 c bacon (I use the Costco precooked crumbles)
3/4 c cottage cheese
Mix together in 9x13 pan and bake at 375 for about a hour.
I've made it with broccoli, ham, green onions, hash browns (the carb version) it's really just whatever you like
You can also make half a recipe- I just have a big family! One serving for everyone and it's half gone already.
