I stumbled across this idea how to make meatloaf from watching a Rachel Ray show years ago and tweaked it a little. It makes the BEST meatloaf you will ever have! Even those who are not fans of meatloaf love this.
It's also another meal I make extra of for my freezer.
1-2 lbs of ground beef (depending on the size of your family)
1 box stove top stuffing mix (I use chicken flavored, but you can do whatever kind you like)
2 eggs
1/2 c. ketchup
Mix well with your hands. You want to make sure you mix it enough so that the eggs, ketchup and stuffing are all through the meat- but DO NOT over mix or your meat will be tough.
Place into a bread pan, form into a loaf and put in a casserole dish, or for a quicker meal put into a cupcake pan and create individual meatloaves for each person. Drizzle ketchup on top of the meat.
If making one big loaf- cover with tin foil and bake at 350 for 1 hour, remove tinfoil and bake for another 30 mins.
If making individual meatloaves in a cupcake pan- no covering is necessary. Bake at 350 for 45 mins.
This goes REALLY well with mashed sweet potatoes and peas.
*For my freezer meals I used 1 5lb package of ground beef, 4 c. stuffing mix, 8 eggs, and about 1 c. ketchup- this made 1 large bread pan size for tonight, and 3 small freezer pans*
