My sister-in-law Sarah made this last year at Thanksgiving and it was AMAZING! I half the recipe because my kids are picky and wont eat much of it and it's too good to let go to waste! :) I also used bran flakes (Total) instead of corn to add that extra bit of healthiness. We did a meatless night tonight so this was our main dish- a great vegetarian recipe, or just as a side dish!
2 cans sweet potatoes
1 c. milk
½ t. cinnamon
¼ c. sugar
2 eggs
¾ stick butter-melted
½ t. nutmeg
-Mix well and bake in greased pan at 400 for 30 mins
(not sure why the color in this pic is so dull- in reality it's a semi-bright orange color)
Topping:
1 c. brown sugar
1 ½ c. corn flakes-crushed
1 c. pecans
1 ½ sticks butter-melted
-Mix well, then top over casserole and cook for another 15 minutes.
