The Cheese Enchiladas are frozen when they go in the oven, they bake for 60 minutes. There is 6 enchiladas in each- so it's a family size meal. Having 6 of us in our family I baked 2 of them, but one ended up being plenty for us! So I gave the extra one to my neighbor's family and her boys loved it! She said they just grabbed their forks and dug in.
I made some refried beans with cheese to compliment the enchiladas, then when they were cooked I was pleasantly surprised to discover the enchiladas are on top of Mexican rice!! BONUS! What a great surprise to find a side dish with our freezer meal!
As for the flavor, to me they tasted just like something you would order from a Mexican restaurant. My husband liked them, the kids- not so much, but they're going through a picky stage right now so they're not a fair test.
This was definitely an easy meal that fed us all well! If you love Mexican food you'll love these!
