Zucchini Bread


It's harvesting time! And if you're lucky enough to have lots of zucchini that means it's time for zucchini bread!  What I do when there's plenty of zucchini is grate it all up in my food processor, put it into ziploc bags and freeze it for use as needed.  Then when you want to make bread just pull one of the bags of frozen zucchini out of the freezer and enjoy.  (this is also why I freeze it in quart size bags instead of gallon)

3 eggs
2 c sugar
3 t vanilla
1 c veg oil (I use applesauce instead for a healthier and more moist bread)
3 c grated zucchini
3 c flour
1 t salt
1 t baking soda
3 t ground cinnamon
1/4 t baking powder

Mix all together, pour into greased & floured bread pans.  Bake at 350 for 1 hour.
Yield: 2 loaves
