Zucchini Pizza


After having lots of zucchini to use up I wanted to try this idea I had seen on my Pinterest.  The original idea/recipe is here.  She grilled hers on the bbq, I chose to bake mine instead.  I thought these were fabulous!  But there's just not really a wrong way to have zucchini in my opinion so maybe I'm bias.

After slicing the zucchini into fairly thick circles I dipped them into some beaten egg then coated them with Italian seasoned breadcrumbs with Parmesan cheese mixed in.
drizzle a little olive oil on to the cookie sheet and then place each zucchini on the oil.  Then spread on your desired pizza sauce.  I usually just use some spaghetti sauce that I'll add a little more seasoning to and maybe some tomato paste.
Top with cheese and any pizza toppings you enjoy.  I didn't have any pepperoni when I made these so we settled with plain cheese.














Bake at 350 for 20 minutes or until cheese starts to get a little golden.
