Gooey Mint Brownies


This was a pinterest recipe I experimented with this week.  The result- a ooey gooey mint chocolate brownie that will make your toes curl!  It really wasn't as hard and it appeared to be.

My version is pretty much the same except for the chocolate frosting.  However, my picture doesn't look as pretty :)


Brownie:
1 cup butter (2 cubes)
1/2 c. cocoa powder
Melt butter, add cocoa and allow to cool then add:

2 T honey
4 eggs
2 c. sugar
1 3/4 c. flour
1/2 T baking powder (yes that's half a tablespoon!)
1/2 t. salt
1 c. walnuts (optional)

Mix together, then pour into a greased 9x13 pan and bake at 350 for 25 mins. (I found that min needed at LEAST 30 more minutes to get fully set up- so just check for done-ness by how it wiggles or using a toothpick inserted in the middle)

Mint frosting:
5 T butter
dash of salt (about 1/4 t)
1 T light corn syrup
2 1/3 cups powdered sugar
1/2 t. mint extract (I used peppermint)
a few drops of green food coloring
Mix all of this together, then add slowly up to 3 T of milk to thin it a little. (you want it runny)
Spread this over the cooled brownies. It will be easier to frost the chocolate frosting on top if you place the brownies in the fridge or freezer for a bit at this point.

Chocolate frosting:
1 cube butter- soft
2 1/2 c. powdered sugar
2/3 c. cocoa powder
mix well adding a little bit of milk as needed to thin it down.
Spread over the mint frosting on brownies.
