The BEST Sugar Cookies

Yesterday I experimented with a sugar cookie recipe from Pinterest.  Because you just have to have sugar cookies at Valentines.  Of course, I changed it up a little!  And these are quite possibly the best sugar cookies I've ever made!  They're soft and delicious, and the frosting is another experiment that turned out fabulous!  Here's the recipe:
The original recipe can be found here.

I doubled the recipe which barely fit in my 6 quart Kitchen Aid.
Here's the recipe with changes I made-

1# (yes 4 cubes) of butter- half melted
3 1/2 c. sugar
Cream these together then add:
4 eggs
2 t. vanilla
1/2 t. coconut extract
2 c. sour cream
11 c flour
2 t. baking powder
3 t. baking soda
1 t. salt
Mix all together well.  Dough will be soft.  Take a large handful at a time and knead it slightly on a floured surface until it's not sticky, then roll it out to 1/4- 1/2 inch thick and cut with your cookie cutter.  Bake at 350 for 8 minutes.  (you don't want them to get golden or they will not be soft cookies)

Strawberry Frosting:
2 cubes butter- soft only
6 c. powdered sugar
1/4 c. milk
2 t. vanilla
1/3-1/2 of a small box of strawberry jello powder

I beat this in my mixer on high until it's nice and smooth.  (the jello will make it seem grainy at first, but will dissolve into the frosting after a bit)

Enjoy!

  1. Sounds good, minus the coconut extract! lol It's a lot like my recipe. Sour cream makes the cookie! BTW: The recipe you posted is already doubled, right?

  2. WHAT?!?!? The coconut extract is the best! You're just one of those crazy people that don't like coconut lol Course I've known you were crazy for years.
