Healthy Zucchini Parmesan Chips



Now this was a pinterest idea that had to be tested!  Healthy Zucchini Parmesan chips!  It's getting close to harvest time for those with gardens, and anyone that's planted zucchini knows you will end up with more then you know what to do with.  So a new recipe to use up those zukes is always good!Basically for this recipe you slice the zucchini into circles.  You want them about 1/4 inch thick (or you could do slightly thicker)
lay them out on a cookie sheet, drizzle a little bit of olive oil on top then sprinkle shredded Parmesan cheese on top.
Then season with what seasonings you like- I used garlic & herb seasoning mix.

Bake at 350 for 30 minutes or until they start to get golden.

Mine needed to be cooked for a little longer.  They were slightly soggy which I think cooking longer would help.

What a healthy snack or side dish to a meal! We loved them!
