Half Wheat Cinnamon Rolls Recipe
This weekend was a crazy one and we needed a quick easy breakfast we could grab and go with. Cinnamon rolls!! When I first printed off this recipe I didn't realize it was for a bread machine, so I had to do a little improvising...... and why not add half wheat flour while I'm at it- (that makes them healthy!)
Here is my recipe- it made 2 good cookie sheets worth of cinnamon rolls so if you want less cut the recipe in 1/3rds. (or just freeze the extra rolls before baking them and you have an easy freezer breakfast or dessert)
3 cups of warm milk
1 cup butter
3 T of yeast (let this dissolve and foam in some of the warm milk)
3 t. salt
6 eggs
1 1/2 c. sugar
7 c. white flour
6 c. wheat flour
Remember, the more sticky the dough the softer the rolls will be so don't add too much flour. Once these are all mixed together place a dish towel that's wet with warm water over the top of your bowl and let the dough raise until double in size (about a hour)
Take a big chunk (maybe about 1/3- 1/4 of the dough) and roll it out on a floured surface. You want to roll it into a oval shape.
Now melt 1 cube of butter in a bowl, and spread some of that butter onto the dough (make sure you have enough butter to do this for all the dough you will be rolling out)
Next sprinkle some brown sugar and cinnamon over the butter and make sure it's evenly spread out.
Now it's time to roll them up. If you want a few big rolls, start at the narrow side. If you want lots of smaller rolls (my choice with kids) start at the long side.
Now this part is a trick my mom used to do- take a length of string (like sewing thread) about 18" long. Slide it under the end of the roll, cross it and pull each side- the string will cut the roll perfectly and not squish your roll.
Place the rolls on a lightly greased cookie sheet.
Bake at 350 for about 15 minutes or until they are started to get golden.
Frosting is optional- this is the recipe I did for a batch this big:
16 oz cream cheese
1 c. butter
2# package of powdered sugar
3 t. vanilla
Blend together, then spread over warm cinnamon rolls. Enjoy! Oh and remember, these have half wheat flour in them so they're kinda healthy right? ;)
