Jicama Fries

Last week in our Bountiful Basket we got 2 Jicama's...... I think it's the first time I've ever had one in my house.  I've probably only ever even tried one once or twice on a veggie tray at someone elses's house.  So when I had 2 good sized ones in my basket it was time to turn to Pinterest!  That's where I found many ideas for Jicama- but the one I decided to try was Jicama Fries.....
The process was simple enough-

Peel the Jicama
Cut it into fry shapes
Boil it for 5-10 minutes

Then place it on a baking sheet, coat with olive oil and season how you like.  I seasoned it with some french fry seasoning (I bought at the dollar store- seasoned salt would probably work well too) and a little bit of paprika.

Bake at 400 for about 10-15 minutes.

They were a little more crunchy than normal fries, but they tasted really good! The carmelization they got made the flavor even better.  They were a little on the salty side by that's from my seasoning.

If you're looking for a healthy snack or substitute for potatoes try these!  I was really impressed.  I'm hoping they're in another bountiful basket soon!
