Veggie noodles!

Our last bountiful basket was EXTRA bountiful! Here's the picture of everything we got this time-

As you can see we got a ton of zucchini & squash.  A friend of mine has a really good recipe for a casserole that has zucchini, squash, tomatoes, and stuffing in it but I didn't have the recipe last night so I decided to try out my new Pampered Chef Julianne peeler!
Let me just say---- AWESOME!  I can't wait until we have lots of zucchini & squash in our garden- we will definitely be doing this a lot this fall.
Basically it's like a potato peeler- but with spikes, so when you peel the vegetable it makes strips, which for what I used it for made veggie noodles! Here's what it looked like:

Once they were all peeled I placed them into some boiling water and cooked for about 5-10 minutes until they were soft.  For the sauce I made my alfredo sauce.  At first my family wasn't too sure they wanted to even try them, especially my husband who wasn't shy about voicing his opinion.  But needless to say we were scraping the pan clean and everyone wished there was more!  Even my hubby was surprised how good they were.


So healthy- check, gluten free-check, great way to use up zucchini & squash-check, overall this was one of the coolest dinners I think I've made.  And I'm totally happy that I bought the Pampered Chef Julianne peeler!
