Chicken Enchilada Casserole


This was one of those experiments where everything seems to take a lot of effort to make so you throw something together.  And it worked!  Chicken Enchilada Casserole! It was really easy to make and I had all the ingredients on hand.  It probably took me less than 30 minutes from start to eating!
In a casserole dish layer some corn tortillas (make sure the entire bottom is covered.  Then spread some cooked chicken on top.  I used a bottle of my canned chicken from food storage so I didn't even have to wait for it to cook!  (this would be a great recipe to add to food storage ideas)


Sprinkle cheese over the chicken then put another layer of corn tortillas on top.

You can do more layers as you like with just cheese or cheese & chicken, chili's, beans, rice, whatever else you like!  Once your top layer is done, pour some canned Enchilada sauce on top (I use Macayo's) then sprinkle with cheese.
Bake at 350 until the cheese is melted.  Since the chicken is already cooked you're pretty much just heating everything up and melting the cheese.  Enjoy!
