This weeks post topics are going to be a little wacky from our regular schedule with the holiday.
When you have a good sized family like mine and most everyone loves bacon it can get expensive to have on a regular occasion. So we save bacon for special meals. The other morning we were having a family breakfast which has become a special occasion with Scott's work schedule lately. Having one of my inspirations I did something a little different with the bacon, and no, I didn't boil it like the mom in Better Off Dead!
Cutting up 1 package of bacon, and cooking it, I then sprinkled a few pieces of bacon into the pancakes right after pouring the batter onto the pan. As the pancake cooked the bacon was infused inside and made a delicious bacon pancake!
It was so awesome I think we'll make it more often! And let's face it, I have yet to find a way to eat bacon that isn't delicious.
There seems to be no end to the creative uses for bacon these days! I've never heard of bacon pancakes but it's a clever idea and I'll bet everyone found it a real treat.

ReplyDeletemy kids would probably love this. I don't understand the obsession with bacon, but its working better for the pig farmers than the "other white meat" campaign. :-)
