Quick and easy freezer side dish


It was while debating on what to do with an abundance of squash and zucchini that I came up with this really easy idea for a quick and easy to make side dish that can be made up ahead of time and kept in the freezer.  I love squash and zucchini cooked in a frying pan with a little butter and carrots.  It's something my grandma used to make each Summer with my grandpa's harvest.


So using my handy dandy Kitchen Aid with attachments, I sliced up a bunch of the zucchini, squash and carrots, mixed them together then filled ziploc bags.

Now whenever we need a quick and easy side dish to a meal all I have to do is pull out a bag and either pop them in the microwave for a few minutes until cooked, or cook them in a frying pan with butter.  All 3 vegetables are already packed together.

I normally buy the squash and zucchini rounds in the freezer bags and put them into my sauce for Parmesan Chicken (sooo good!)  So now this will not only save me time, but money too! Typically a bag of the squash and zucchini costs $2 or more and since I paid about $6.00 for enough to fill 14 bags I think it was a pretty good deal!
