Crock Pot Chicken & Rice comfort food


Last time we visited Utah my sister in law made this crock pot chicken & rice.  It was so good! It's a total comfort food, and lets face it, with Summer time now upon us who wants to heat up the house with the oven on? Let the season of crock pot cooking begin!!!  This recipe is so easy and it includes things you probably have in your pantry- even better, it's a great food storage recipe since everything is shelf stable!
In your crock pot put:

2 cans cream of chicken soup
2 cans chicken (I used costco's canned chicken, but you could also do homemade canned chicken or even fresh chicken cut up)
2 cans chicken broth (or make your own with some soup flavoring and water)
2 cups of rice

Turn the crock pot on low and let it cook all day.  I put mine in about 10am and it was ready by 5pm.
The last 30 minutes or so I added 1 can of corn just to give a little vegetable to it.  You could also do green beans.

It made a good amount in my larger crock pot and my family literally cleaned the bowl!!

Since all the ingredients to make this are shelf stable this is a great recipe to add to your food storage recipes!
