Andie's Mint Chocolate Cake


My husband thinks I should start a collection of recipes titled something like "Ugly Deliciousness" because often I will make an experiment like this Andie's Mint Chocolate Cake that will turn out less pleasing to the eyes, but so good everyone loves it!  This is a perfect example!  Because lets face it, sometimes you just can't make a casserole look good, but it tastes amazing! Here's the recipe for this cake that my family devoured.
For the cake I just did a regular box devils food cake mix.  I didn't do anything special other than substituting applesauce for the oil like I always do.

The frosting-
1 cube butter- melted
1/3 c. coco powder
1/4 c. milk
1/4 t. salt

Mix on high speed, add more milk or powdered sugar to get it to your desired consistency.

Once I frosted my 2 rounds together with a little frosting and a handful of andie's baking chips, then frosted the outsides I melted about 1/2 c. of andie's baking chips in the microwave.
Drizzel the andie's melted chocolate on top of the cake.  (it will set up slightly harder than the frosting but that's part of what makes it so yummy!)

It wasn't until we were eating and enjoying the cake that my husband convinced me this needed to go on the blog!  So- hence this is the first picture of Ugly Deliciousness.
