Crockpot Meatloaf



Can it be done? Meatloaf in the crockpot?!?!?  With the Summer heat the LAST thing anyone wants to do is turn their oven on for a hour or more.  We've become crockpot aholics around our house.  The latest experiment was this crockpot meatloaf-
I used my typical recipe for meatloaf- not to toot my own horn or anything but it's pretty amazing! I have people ask me for the recipe all the time then they're shocked to learn how simple it is:

Ground Beef (depending on your family size, I usually do one of the big 4-5 lb packages and then freeze a few loaves before cooking them for easy freezer meals)

Stuffing mix- just your typical Stove Top mix or store brand works too.  For the larger batches I use 2-3 boxes, so adjust accordingly

Eggs- for my larger batches I'd put about 6-8 eggs in

Ketchup- probably about 1c. for my large batch

You can't really mess this recipe up- just adjust the eggs and ketchup to make the meatloaf wet enough to stick together, but not runny.  Don't over mix! I mix it by hand just until all the ingredients are blended, over mixing could make the meat tough.

Once I had the basic meatloaf ready to be cooked I just formed some of it into the crockpot as shown above, drizzle a little ketchup on top (I do that when I bake it in the oven too- mostly it just makes it look pretty)
Cook on low for 5-6 hours or high for 2-3.

My family loved it just as much as they always do!  The only difference from the oven was a little less caramelization, but all the flavor was still there.  So swapping some caramelization for keeping the house cool is worth it in Summer!
