Did you miss me yesterday? Ok, maybe you didn't even notice I didn't post. Surprisingly after being up a lot at night with the baby it was still a pretty productive day of sewing and making some delicious Strawberry Freezer Jam. It's so easy to make and tastes so fresh and wonderful! You need to make some- here's how:
Start with your strawberries- my grocery store had them on sale this week so I picked up 2 flats of them.
Rinse them off. Cut off the green leafy parts and put the strawberries into a bowl.
Add your sugar and pectin. The amounts will vary and be on your pectin instructions. This is the pectin I used. I ended up doing 8x the recipe so it was just over 13 cups of strawberries, 16 T of pectin, and 5 1/3 cups of sugar.
There are sugar free, or low sugar pectin's available, as well as liquid pectin, and ones you have to cook first before adding. It just depends on what pectin you use. No matter what though your pectin will have instructions.
Once you mix together the strawberries, pectin and sugar for a few minutes (my instructions said 3) start pouring the jam into jars. Make sure the jars are clean.
Since this is the recipe for freezer jam you don't need to boil the seals or process the jars in water. Just wipe down the jar and the rim, put the seal and ring on and put it in the freezer.
Some people put the jam in freezer ziploc bags or the disposable glad containers even.
We go through this pretty fast around our house! There's nothing better than some strawberry jam with fresh bananas cut up in it and then put on pancakes! Yummy!
