Nacho Fries



During our girls night in we decided to try out a Pinterest recipe that looked delicious.  Nacho Fries! This was relatively easy to make, and pretty good to snack on.  Here's the instructions:
We go the original idea from Oh So Deliciouso but as usual made some adaptations.

First slice your potatoes into the shape you'd like.  I've seen these cut into circles or wedges.  You just want to make sure they're not too thin so they don't fall apart with the weight of the toppings.

Slice as many as you want/need.  We did enough to fill a cookie sheet.

Next drizzle some olive oil on top and toss the potatoes with your hands to make sure they all get a light coating of the oil so they don't stick to each other or the pan and it will help them get golden.

Sprinkle a little salt & pepper on them, and if you'd like some other seasonings like seasoned salt or garlic powder.

Bake at 425 for about 30 minutes or until they start to get soft.

While they're baking cook up some chopped bacon.

In a bowl mix together 1 cup sour cream and 1/4 c. ranch dressing.

Take the potatoes out of the oven and sprinkle some cheese on top- we used cheddar and mozzarella, but I think you may get a little more flavor with a Colby jack.

Next sprinkle the bacon on top, then drizzle the sour cream mixture on top.

Bake for another 15 minutes or until the cheese is nice and melted.

They were a pretty good snack.  I found them pretty mild in flavor so if you like a little stronger flavor kick it up a bit with different cheese and seasonings.
