Chicken Avocado Burritos


In searching for some dinner recipe inspiration I came across this recipe I had pinned awhile back.  Chicken Avocado Burritos..... sounds interesting.  So we tried it out!  And of course I did my own variation of it.  The kids even liked it!  It made plenty so after giving some to our neighbors we still had 6 left over to freeze for a quick meal in the future.

This however is my version:

In a frying pan place a few Tablespoons of olive oil, then add your chicken breasts.  I did one family size package that had about 6 breasts.
Season the chicken- I used:
salt & pepper
taco soup mix (which I later realized taco seasoning would have more flavor so I added that later as well)
2 T. minced garlic

Once the chicken is brown on one side turn it over and pour some mustard on top of each breast.  This sounded really odd- but it tasted amazing and not at all like a strong mustard flavor.
Add 1/2 c. of water then put a lid on the pan, turn the heat down a bit and let the chicken cook through.
My chicken breasts were super thick so I ended up taking them out and slicing them after about 15 minutes so they would cook faster.  This is also when I added the taco seasoning.  Then cook with the lid on a little more to make sure the chicken is cooked all the way through.

While the chicken is cooking mix together in a bowl:

4 avocados (I used some that I had frozen- just defrosted them in the microwave for a minute)
1 c. sour cream
2 T cilantro
2 T lime juice

Once your chicken is cooked assemble the burritos by placing a few strips of chicken in the middle of your tortilla, top with a spoonful of the avocado mixture, then a small handful of cheese.  Fold up like a burrito by folding the sides in then rolling the bottom towards the top.

In another frying pan place a few Table spoons of olive oil and let it get hot for a minute.  Then add your burritos as many as will fit in the pan at once.  I cooked mine with the flap side down first to help seal them closed better.  Once one side is brown turn them over and when the second side is brown they are done!

I was really concerned they would be too dry and maybe need a sauce (I'm a sauce person) but they were FABULOUS!!!
