Zucchini Brownies

Today I wanted to be a little adventurous so I tried a new recipe from my favorite recipe website: http://www.allrecipes.com/
The thing I love most about this website (aside from it's HUGE assortment of recipes) is the fact that each recipe is rated 0-5 stars and shows an average rating.
This recipe was rated 4.5 of 5 stars by 1204 people. After making it personally I would give it a 3.
Usually the rating system is pretty spot on, but this recipe was very dry which in reading the comments was normal and I hoped it would moisten when baking, but it didn't all the way.  The texture was kind of grainy for my liking, but the flavor was good. And for brownies that have zucchini in them they were good!

And here are my step by step pictures with the recipe:
1/2 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
Mix well
Mix in remaining ingredients (I omitted nuts)
1/2 cup unsweetened cocoa powder


1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts
The mix will be VERY dry... pour it in a 9x13 greased pan
Once mine baked it looked very similar on the top as it did when I put it in... but you could tell the bottom had moistened and was more like a normal brownie.
Frosting:
6 tablespoons unsweetened cocoa powder


1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract
(I used butter)
Melt butter or margarine then mix all together.
*because the top of my brownies were so crumbly I had to double the frosting recipe*
They were still warm and gooey when I cut one out to take a picture of it...(see above)

Tonight I'll be making one of my favorite casseroles and will post pictures and the recipe!
