Chicken Broccoli Cassarole

Ok this is a GREAT casserole! it's way yummy!
Before I list the recipe you'll see in the pictures 2 casseroles.  Every time I make a casserole, lasagna or something that takes a lot of time I make 2-5 times as much as we'll eat that night, and as I'm assembling it I put the extra into a freezable and bakeable dish. Smart N Final sells them with the lids that are silver on one side and white on the other- they are perfect for the freezer then straight to the oven.  This way I always have a home cooked meal in the freezer. So these pictures represent a triple batch. Now for the recipe...


Boil chicken until cooked
Boil Broccoli until mostly cooked
Both of these can be as little or as much as your family likes.  My family likes more veggies than meat so that's what I do.
Layer the chicken and broccoli in the pan evenly
In a bowl mix:
1-10 1/2 oz. cream of chicken soup
1/2 C milk
1 t lemon juice
3/4 C mayonnaise
1 C grated cheddar cheese
Then pour over chicken & broccoli
Sprinkle dry stove top stuffing mix on top (approx 2 cups for 1 batch)
Melt 4 T butter and drizzle on top of stuffing
Bake at 350 for 40 mins, or until bubbly
