Lasagna Roll Ups

After seeing this idea on pinterest we knew it HAD to be tested!  Lasagna is one of my husband's favorite meals, and also a meal that everyone in my family will eat well.  Since I had some wheat pasta and regular pasta noodles I used both (hence the color difference in the picture)
I found these very easy to make and although the assembly created quite a mess on my counter top it was easy to dish up when time to eat, and the leftovers were easy to put away.
The recipe is the same as you would use for regular lasagna- the only difference is you place the cheese layer onto the noodle, roll it up, and the sauce is poured on top.

Prepare for a mess on your counter.  I wiped mine down with Clorox before and after- no sweat.

Here's my recipe- Lasagna isn't really something you can mess up in my experience.

1 large tub of cottage cheese (it's cheaper than ricotta)
2 eggs
1/4 c. Parmesan cheese
1/4. c. mozzarella cheese
1 t. garlic & herb seasoning
1 t. oregano
1 t. garlic powder
(any other seasonings you like)
Mix together then spread on each noodle, and then roll them up and place into a casserole dish.

Sauce:
Brown 1# ground beef, seasoned with Italian seasoning
Add 1 jar of your favorite spaghetti sauce (or you can puree some stewed tomatoes, add tomato paste, tomato sauce, and any seasonings you like)

Pour sauce over the noodles.  Sprinkle mozzarella cheese on top.  Bake at 350 for 40 mins.
