Lemon Raspberry & Pomegranate Cake


Ok so even though this cake looks a little bit like a Dr. Seuss cake it tastes AMAZINGLY DELICIOUS!! This cake was made to celebrate my husband's birthday tonight.  He was a little nervous that I was going to experiment, but hopefully now he's learned his lesson!  Lemon pudding, raspberry pie filling, fresh raspberries, and pomegranate seeds........ ohhhh soooo heavenly! It really wasn't that hard to make, a little messy, but if you don't mind it not looking perfect while tasting so great this is the one for you! Plus it's made with fruit, so that makes it healthy right?
For the cakes-
Using 2 boxes of Vanilla cake mix, make 2 cakes (8 or 9 inch round) normal, and then add 1 small box of instant lemon pudding to the rest of the batter and mix well.  So you will have 2 vanilla cakes, and 2 lemon cakes.


Once you have the cakes cooled off you layer them alternating vanilla/lemon and pour raspberry pie filling and sprinkle pomegranate seeds on top of the pie filling between each layer. (just spoon out 1/3 of the can between each layer)


For the frosting-
I used my kitchenaid but if you don't have one you could use a hand mixer.

1 pint whipping cream
1 t vanilla
- beat until it starts to thicken (just STARTS, you don't want butter)
Then add 1 1/2 cups of powdered sugar and beat until it gets thicker (like cool whip consistency)
Add in 1 small box of instant lemon pudding and 1 cup of milk.


Beat together until it thickens about like cool whip-  Use this to frost the cake.
With all the layers it's a bit tricky to get it to look ok, so don't stress about it being smooth! Adding bumps makes it look like they're supposed to be there.


Then I topped it off with some fresh raspberries around the top and bottom.
