Chicken Carbonara Crock Pot Recipe



This was created on a day when I didn't know what to make for dinner, but wanted something I could throw into the crock pot to be easy.  Originally I was going to call it "my favorite things" crock pot meal, but once it started cooking it smelled just like Chicken Carbonara!  Purely by accident, that's what it is (with a few differences)

In a crock pot add:

1 1/2 lbs chicken breast- chopped, raw
5-6  potatoes- cubed
1 onion- sliced
6 slices of bacon- cut up (also raw)
3/4 c sour cream
1- 8oz bar of cream cheese (this is optional and actually may be better without it)

Cook on low for 6-8 hours.

You can serve with rice, or add noodles in for the last hour or so.

This could also be made ahead of time and frozen together for a freezer crock pot meal.
