There's something about Summer time that says we should eat citrus because it's so refreshing! Maybe it's a subconscious belief that it will cool us off in the heat? In Arizona heat we are willing to try anything! Especially if it involves cupcakes! So was born this recipe for Key Lime Cupcakes.
Make a box of golden vanilla cake mix according to the box directions. Add 2/3 of a small box of lime jello powder to the cake mix and stir well.
Bake cupcakes according to the box directions.
Frosting:
1 cube butter melted
1/2 of a package of powdered sugar
4 T lime juice
1/3 box of lime jello powder
green food coloring
Mix well
Well, it didn't make us cooler in this heat, but it sure made it more pleasant to be in!
