Chicken Burrito Pie Recipe


The problem: making burritos for a freezer meal and all I have are round containers which don't fit burritos very well.
Solution: a layered burrito pie!!
Why didn't I think of this sooner?!?!?  The tortillas fit exactly into the round freezer containers and I can layer them so there's no empty space giving it the ability to feed more when it's used!  You could also make this in a pie pan if you were making it to eat right away.  Let me show you how I did it-
Place one tortilla in the bottom of the pan.  Put your chicken (or beef, port, etc.) on top.

Next place another tortilla on top of the chicken and spread some rice on top.  (I cooked my rice in chicken stock with a little lime juice and parsley- it was fabulous!)

Add another tortilla on top of the rice and spread beans on top of this layer.  I used pinto in the picture, but also made others with black beans.


And finally the top layer- another tortilla on top of the beans, then spread some enchilada sauce making sure some sauce gets down the sides for the lower layers. (I used the canned Macayo's green enchilada sauce)  Sprinkle cheese on top, then place the cover on, label it and pop it into your freezer. OR pop it into your oven!
