Tater Tot Casserole

Believe it or not, until this experiment I had never made a tater tot casserole.  My mom didn't make them when I was growing up, so I only even tried it a few times at potlucks and other places.  My husband is a huge fan of tater tots. (Post-lord of the rings we can't say taters in our house without saying "taters precious")  So I finally figured I should try making one of his favorite casseroles.
It turned out AMAZING!!  ok I use that word a lot, let me think of another word........ well, lets just say it was so good that everyone liked it and it's going to be a regular thing I make from now on.

Recipe:
Brown 1 1/2 lbs ground beef
(I seasoned it with dried onion and Worcestershire sauce)
Mix in:
1 bag of peas & carrots
2 cans cream of mushroom soup

Pour the mixture into a casserole dish.  Sprinkle cheese on top, then arrange the tater tots on top of the cheese.  Bake at 350 for 40 minutes.

You could change up the veggies, or not even add meat.  This is a cheap meal that is filling and  can cover a lot of the food groups at once!  Plus it's a great way to sneak in some veggies for the kids.  And it'd make a good freezer meal.
