Homemade Tomato Soup
This was one of those Pinterest ideas that I made and think we really should like it better than we did. Homemade tomato soup. We had plenty of tomatoes to use up so I figured, why not? It turned out tasting ok- healthy, and I can't help but thinking there's no reason we shouldn't love it. I guess we're just used to canned tomato soup and this tastes MUCH more fresh.
First you'll want to caramelize some onion- just cook it in a little bit of olive oil until it gets nice and golden.
I added about 1 T of minced garlic towards the end.
Place the onions, and about 6 tomatoes into a blender and blend until smooth. I had to do a couple batches to get all the tomatoes.
Once it's all smooth, heat it up in a stock pot. Add 1 cup of milk, 1 t. basil, and salt to taste.
This is one we may have to experiment with a bit more. It tasted fresh, but just not what we're used to for tomato soup.
