Here is an experimental recipe I tried that turned out FANTASTIC!!! Remember my experiment of using Jell-O in cake mix? Well I tried it again, this time adding peach jell-o to a white cake mix, then frosting with cream cheese frosting. BINGO! Peaches & Cream Cupcakes!
Cupcakes:
1 box of white cake mix- make according to directions
1/2 of a small box of peach jell-o (dry)
mix together and bake like you would normal cupcakes.
Frosting: (I doubled the batch & froze the extra so I could make more experiments this week)- this is the double batch recipe.
1 cube butter- melted
2- 8oz cream cheese
2 t. vanilla
2# package of powdered sugar
Beat together until smooth. Frost cupcakes!
I'm thinking of making some more Orange Creamcicle ones this week, and maybe a strawberries & cream one too!
